Roma Tomato Blooms

There are many advantage to growing your own vegetables. Besides saving money, you can be assured to benefit fully from the freshness and nutrients in a vegetable. It is known that vegetable start losing its vitamins and minerals after it is harvested.

It is not difficult to grow your own vegetables. There are many types of vegetable that grow easily both either indoor or outdoor. Here are some of my favorites easy to grow vegetables’:

Alfafa Sprout

Alfafa Sprout is a mildly flavoured, crunchy nutritious vegetable commonly used in salad or sandwiches. Alfafa sprout is a nutrient powerhouse as it contains iron, magnesium, essential amino-acids, chlorophyll, vitamin A, vitamin B2, vitamin C, vitamin D, fibre and more. Seeds of Alfafa sprout can be easily purchased online, supermarket or garden centre. The seed takes about 5 to 6 days to sprout depending on the temperature. Alfafa sprout are best grown indoor, avoiding direct sunlight when the shoots are growing and near indirect sunlight to mature the sprout.

Tomato

Tomato can be eaten raw or cooked. It is commonly used in Italian and Mediterranean cooking. There are many variety of tomato such as money maker, gardener delight, golden sunshine, alicante, cherry tomato, tumbler and many more. Lycopene, a powerful antioxidant found in tomato is believed to help prevent prostate cancer. Tomato are usually grown outdoor or in a green house. Tomato can also be grown indoors on a windowsill where there is direct sunlight. You can grow tomato easily from seeds or you can buy a young tomato plant from the garden centre. With a good source of sunlight and watering, you will be able to harvest tomato throughout summer.

Salad leaves

Salad leaves such as rocket leaves and different types of lettuce are usually eaten raw for its nutritional values. Salad leaves as it is known are common vegetable used in salad dishes. There are usually different types of salad leaves seed in the packet. Salad leaves do not need a big area to grow, in fact salad leaves can be grown in between other vegetables. You can also grow salad leaves in small containers by the windowsill. Salad leaves grow quickly, you can enjoy the crispy, fresh salad leaves simply by cutting the leaves at any stage of growth and the leaves will grow again.

Herbs

Herbs like basil, thyme, coriander, oregano and rosemary are easy herbs to grow. These herbs not only enhance the flavors of food it also have certain medicinal benefits. Herbs can be indoor in a herb box by the windowsill. Growing herbs indoor would also mean that you will get your supply of herbs all year round. Herbs grown outdoor increases your supply and it is a great addition to the landscape. Herb seeds containing individual types of herbs are easily found in shops. Propagate the herb seed in a propagating tray indoor and transfer young plant to your herb trough or box when the young plant is more established.

Spinach

Spinach is a green vegetable that is power packed with iron, calcium, vitamin A and C, potassium and folic acid. Spinach is usually cook as stir fry, baked or steamed. Spinach can be grown in containers or alongside other crops. Spinach grows well in full sun or partial shade and it takes about 4 to 6 weeks to fully grow from seeds. You will get a continuous supply of spinach when you cut individual spinach leaves for used and leave the young leaves to grow for later harvest.

Be prepared to get a continuous supply of fresh vegetables this summer. Start your vegetable gardening with these easy to grow vegetables.

Colorful Tomatoes

I MISS THOSE BIG, CRAZY GARDENS

My late husband was a city transplant. What he couldn’t “farm” on acres, he tried to plant in our backyard, my aunt’s larger country garden and at his father’s actual farm.

Every year, he would swear he’d plant only six tomato plants in our backyard, plus a “couple” hills of cucumbers, a row of bush green beans, about four pepper plants, maybe a watermelon plant or two and a few cantaloupe hills. Some radishes and a bit of lettuce (which he wouldn’t even eat), maybe a few sweet peas.

He always lived up to his promise – for at least a week or two. Then suddenly I’d go out and there was more freshly dug soil. “Hey, I just found these beet seeds. You know I love pickled beets.” And, “We really want more tomatoes because we just might want some green ones late in the season to fry or use for relish.”

Somehow, another row or two of green beans always showed up and usually more cucumbers and peppers.

Then my aunt called and said, “I was so glad Delbert wanted to plant a few things out here. We had more ground dug than I had plants for. And you know potatoes and onions do better in this sandy soil than they ever do in your clay.”

She didn’t mention the extra four rows of beets or the 12 tomato plants he’d gifted her with. She didn’t mention more green beans. And green beans not only need picked almost one by one by one, but they definitely need cut the same way.

That was an extremely good tomato year. Between the 12 tomato plants here and the 12 at my aunt’s – who absolutely refused to use any of ours since the 6 she’d planted were more than enough – I had a perpetually steaming canning kettle going.

During the worst day of steam, my father-in-law walked in with a bushel basket of ripe tomatoes. “I couldn’t give any more away,” he said apologetically. Then he went back to his truck to get another bushel basket full.

There Delbert had an entire farm to plant upon! Seems that we had a full two-dozen plants there. Plus a lot more potatoes and onions.

The potatoes and onions did keep in our basement or the cellars and basements of relatives, neighbors and friends.

But like I said, it was a very good tomato year. Once my friends started hiding when I showed up with a box or a sack, I canned more tomatoes, froze at least 30 pints, made tomato sauce, ketchup and relish (the peppers kicked in pretty good, too).

The cucumbers were a semi-decent crop that year. What I didn’t pickle were gift able. So long as I called ahead and said I was not bringing tomatoes.

The beets were a harder problem. We all loved pickled beets and canned beets, but one medium size beet makes a lot to preserve. And only one of my friends even ate beets. Having been totaled out on tomatoes, she specified, “No more than four.”

Today, my garden truly is small. I plant four to five tomato plants of various varieties; some just for snacking. I plant a very short row of cucumber plants. Maybe four pepper plants, also of various varieties. A few zucchini, a few yellow squash. Pots of herbs.

During a good year I may still have to freeze a few tomatoes, but I can give most extras to neighbors and friends without anyone running for cover. Yet…it was such fun, too, with my garden “farmer.”

Yes, I miss those wild and wacky huge gardening days.

Watering the tomatoes

Thats right, the colorful little fruit (yes, its a fruit) has been shown to pack a powerful punch against several forms of cancer. A variety of studies indicate that a diet rich in tomato based products (tomato paste, sauce, juice, soup and ketchup) can significantly reduce the risk of prostate, lung and colon cancer. Not bad for a fruit that was considered by many to be poisonous and inedible until the 19th century.What is the Active Ingredient?The active ingredient that makes tomatoes such a formidable opponent against cancer cells is the carotenoid called Lycopene. Lycopene is the natural red pigment found in tomatoes and tomato based products. The redder the tomato, the more lycopene is present.How does Lycopene Fight Cancer?In the body, lycopene is deposited in the liver, lungs, prostate gland, colon and skin. Its concentration in body tissues tends to be higher than all other carotenoids. Some organs, such as the testes and adrenal glands, store higher levels of lycopene than do other organs or tissues. Lycopene acts as a super antioxidant by picking up free radicals in the body. Free radicals are atoms or groups of atoms with an odd number of electrons and can be formed when oxygen interacts with certain molecules. Once formed these highly reactive radicals can start a chain reaction. Their primary danger comes from the damage they can do when they react with important cellular components such as DNA, or the cell membrane. Cells may function poorly or die if this occurs.Is there any Research on the Cancer fighting power of Lycopene?Although more large-scale studies are needed before any definitive conclusions can be made, current research does suggest that lycopene from various tomato products is indeed associated with the lowered risk of several types of cancers. Several published reports are listed below.Gann et al. 1999 – Cancer Research sThe study examined initial plasma caroteniods (including lycopene) of 1872 men in 1982, and then followed them for 13 years. These men were randomly assigned to a placebo group or a group to receive beta-carotene and aspirin supplementation. Of the men studied, 578 developed prostate cancer versus 1294 control subjects. Lycopene was the only antioxidant with a significantly lower average blood level in those men with cancer as compared to those without cancer. In those men not receiving the aspirin and beta carotene, plasma lycopene levels were very strongly related to a lower risk of developing prostate cancer. This study concluded that increased consumption of tomato products and other lycopene-containing foods may reduce the onset of prostate cancer.Giovannucci 1999 – Journal of the National Cancer Institute sThis journal is a review of research studies available regarding cancer risk (not just prostate cancer) and intake of tomato based foods as well as blood lycopene levels. After identifying 72 studies that fit these criteria, it was found that an inverse relationship between tomato intake or blood lycopene levels and cancer risk was reported in 57 of them. Of these 57, it was found that 35 of these inverse relationships were statistically significant. It was also found that cancer protection from lycopene was strongest for prostate, colon and stomach cancers, but also appeared to have some benefit in the treatment of other cancers.Rao et al. 1999 – Nutrition and Cancer sThis study examined plasma and prostate lycopene levels in cancer patients and a control group free of cancer. Though only 12 patients were in each group, significantly lower serum and prostate lycopene levels were found in those with cancer. Levels of other carotenoid substances did not vary between the groups. Additional Benefits In addition to fighting cancer, the lycopene found in tomatoes has been associated with better mental activity in old age and a reduced risk of heart disease. A University of Maryland study found that tomatoes might protect the eyes by hampering macular degeneration, a cause of vision loss in older adults. How do I get Lycopene into my body?The best source of lycopene intake is through eating tomato-based products. This is more effective than supplementation. You will get the most lycopene through concentrates and processed products such as tomato paste, sauce, soup and canned tomatoes. Heating helps to release lycopene and adding a little light olive oil will increase absorption. Start packing your diet with more tomato based recipes and begin enjoying the cancer fighting power of the mighty tomato.
